Vanilla Rock Buns

Ingredients

300g All Purpose Flour / Pastry Flour + 2tsp Baking Powder

1/4 tsp Nutmeg

120g Sugar

150g Margarine/ Salted Butter

1tsp Vanilla

2 Tbsp Milk Powder

150 ml Cool water

Method

  1. Preheat your oven to 175 degrees
  2. In a large bowl, combine the flour, milk powder, nutmeg, and baking powder.
  3. Add the margarine and rub it into the dry ingredients with your fingertips until the mixture resembles fine breadcrumbs.
  4. Stir in the sugar and mix well.
  5. Add vanilla to your water and sprinkle it in while using a fork to gently distribute it evenly in the mixture. The dough should not be smooth—it should look rough and clumpy.
  6. Scoop portions of the mixture onto a prepared baking tray, leaving about 3inches spaces between each bun.
  7. Bake for about 20 minutes, or until the edges are golden brown.
  8. Remove from the oven and immediately transfer the buns to a wire rack to cool completely.
