Gingerbread Recipe
Ingredients
- 125g butter or margarine (softened)
- 125g brown sugar
- 100ml molasses
- 2 large eggs
- 125ml milk (or buttermilk for extra richness)
- 1 Tbsp ginger paste
- ¼ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ¼ tsp salt (to taste)
- 260g all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
Method
- Preheat oven to 175°C. Grease and line a loaf tin or baking pan of choice with baking paper.
- In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, and nutmeg and set aside.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add molasses and eggs one at a time, beating well after each addition. Add the salt at this stage so it dissolves properly.
- Stir in the ginger paste.
- Gradually fold the dry mixture into the wet mixture until just combined
- Mix in the milk until smooth. Do not over mix.
- Pour batter into the prepared pan and smooth the top. Add any extra toppings of choice.
- Bake for 35–40 minutes, or until a skewer inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
