    Banana Bread

    Ingredients

    200g Very Ripe (Peeled) Bananas

    250g All Purpose Flour + 1tsp Baking Soda + 1/2 tsp baking powder

    1/4 tsp Cinnamon Powder (Optional)

    125g Brown/white Sugar

    100g Butter or Margarine (Melted)

    2 Large Eggs

    1tsp Vanilla

    120ml Whole Milk

    150g Chocolate Chips or Any toppings of choice

    Method

    1. Preheat your oven to 175°C
    2. Grease a standard loaf pan and line with parchment paper
    3. In another bowl, whisk together the flour,cinnamon ,baking soda and baking powder.
    4. Mash bananas in a bowl until smooth or lumpy (your preference)
    5. Beat the melted butter/margarine, sugar, eggs, and vanilla together
    6. Add the mashed banana and mix well.
    7. Add dry ingredients to the wet mixture and fold gently and also add milk and mix until just combined (don’t overmix).
    8. Add your toppings (chocolate or nuts) if using any.
    9. Pour batter into your loaf pan and bake 40-50 minutes, or until a toothpick comes out clean.
    10. Allow to cool in the pan for 5minutes then transfer to a rack.

    Gingerbread Recipe

    Ingredients

    • 125g butter or margarine (softened)
    • 125g brown sugar
    • 100ml molasses
    • 2 large eggs
    • 125ml milk (or buttermilk for extra richness)
    • 1 Tbsp ginger paste
    • ¼ tsp ground cinnamon
    • ¼ tsp ground nutmeg
    • ¼ tsp salt (to taste)
    • 260g all-purpose flour
    • 1 tsp baking soda
    • ½ tsp baking powder

    Method

    1. Preheat oven to 175°C. Grease and line a loaf tin or baking pan of choice with baking paper.
    2. In a medium bowl, combine the flour, baking soda, baking powder, cinnamon, and nutmeg and set aside.
    3. In a large bowl, cream butter and sugar until light and fluffy.
    4. Add molasses and eggs one at a time, beating well after each addition. Add the salt at this stage so it dissolves properly.
    5. Stir in the ginger paste.
    6. Gradually fold the dry mixture into the wet mixture until just combined
    7. Mix in the milk until smooth. Do not over mix.
    8. Pour batter into the prepared pan and smooth the top. Add any extra toppings of choice.
    9. Bake for 35–40 minutes, or until a skewer inserted in the center comes out clean.
    10. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
